A healthy treat to start the week sounds great, right? If like me you want your healthy snacks to taste like dessert, you are going to fall in love with these no bake energy bites. You can have them at any time of the day without feeling guilty: for a breakfast on the go, a quick snack or a pop of proteins before training, and you can even enjoy them as a sweet dessert sometimes.

I’m completely addict to these healthy little bites. More interesting, my boyfriend is totally crazy about them as well, although he is always suspicious when I use some “superfood” ingredients. For me, it means a lot about how I succeeded in making a healthy treat taste good!

What goes into peanut butter chocolate chip energy bites?

So what is inside these tiny little bites and what make them so exceptional? With oats, peanut butter, different seeds including the superfood chia seed, but also some cacao nibs and chocolate chips that you simply combine and shape into balls, these bites are a great balance between energetic and healthy.

Are these energy bites healthy?

While the oats are known to maintain healthy cholesterol levels without lowering your good HDL cholesterol, the superfood chia seeds are loaded with antioxidants, are high in quality proteins and deliver massive amount of nutrients with very few calories.

All the dried ingredients are combined with the peanut butter, which is very energetic, contains good fat and is also packed with nutrition. Then I added half chocolate chips half caco nibs, the latter providing pure chocolate flavor and are a rich source of antioxidants, vitamins, mineral and fibers.

Storing instructions

I usually make a whole batch in advance and store it in the refrigerator, then I don’t need to think much and all I need is grabbing one or two energy bites when needed. A delicious snack which is also perfect to keep you away from hunger until the next meal!

Ingredients

Scale
  • 1 cup (90g) old-fashioned oats
  • 1/2 cup (45g) toasted coconut flakes
  • 1/2 cup (45g) ground flax seed
  • 1 Tablespoon chia seeds
  • 1/2 cup (120g) peanut butter
  • 1/3 cup (110g) honey
  • 1/4 cup (30g) cacao nibs
  • 1/4 cup (40g) chocolate chips
  • 1 Tablespoon vanilla extract

Instructions

  1. Stir all the ingredients together in a medium bowl until thoroughly mixed. If too gooey, add some more oatmeal. Cover and let chill in the refrigerator for at least half an hour.
  2. Once chilled, roll into small balls. Store in a airtight container and keep refrigerated for up to 1 week.
