As a lover of dark chocolate mousse prepared with simple ingredients (here’s my go-to recipe), and I was looking for an equally delicious white chocolate mousse, without the use of gelatin or agar-agar. The light and fluffy texture is the key element to a mousse, and while egg whites do the job for a dark chocolate mousse, you need most of the time gelatin or agar-agar to give body and staying power to light-as-air white chocolate mousse.
Some white chocolate mousse recipes call for two ingredients only, white chocolate and whipping cream, but I find them too smooth (not fluffy). So I simply added egg whites, let chill overnight and observed a wonderful result. If like me you’re a true chocolate mousse lover, here’s the one and only white chocolate mousse recipe you need!
3-Ingredient White Chocolate Mousse
3 ingredients, this is what you need to make these white chocolate mousse :
- White chocolate. I recommend white chocolate chips that are easier to melt, but if your cooking skills are a little bit more advanced, use high quality baking white chocolate and chop it into equal-size bite before melting.
- Whipping cream. It is basically heavy liquid cream. You will need to whip it with a hand mixer until stiff peaks form. Whipped cream will bring some lightness to the white chocolate texture.
- Egg whites. Beat them to stiff peaks and add them to the other ingredients. While some white chocolate mousse recipes call for whipping cream and no eggs, I find that egg whites adds more fluffiness to the mousse, making it close to the classic dark chocolate mousse recipe.
That’s it! No gelatin, no agar-agar, and yet, a perfect silky-smooth and fluffy texture!
Pro-tips to make the recipe
While the recipe is extremely simple to prepare, there are a few useful tips to keep in mind to make it a success every single time:
- Use white chocolate chips (preferably) or chop baking white chocolate into equal bite size (ideally pea-size). This enables the chocolate to melt evenly.
- If melting white chocolate in the microwave, stir every 30-seconds. If not smooth yet, place it back in the microwave for another 30 seconds, and stir again. The white chocolate should be silky-smooth and completely melted before using. Yet, let it cool slightly before using!
- Use cold whipping cream. This will help you whip the cream into stiff peaks.
- Fold in the ingredients using a rubber spatula and do not overmix or the mousse will be dense and will not have a smooth and fluffy texture.
- Chilling time is important, don’t skip it! Place the white chocolate mousse in the refrigerator for minimum 3 hours or ideally overnight.
How to serve this white chocolate mousse?
I like to prepare white chocolate mousse in individual portions in a glass or a ramekin, then add a few toppings to cut out the extra sweetness of the white chocolate. Here are just a few suggestions:
- Top with lime zest. You could also add the lime zest directly in the mousse.
- Add a few berries. Raspberries and strawberries are a classic, but you could also use fresh blueberries or blackberry.
- Decorate with dark, milk or white chocolate shaves (or with the three of them together). To create chocolate shaves, use a small vegetable peeler to shave chocolate over each mousse.
- Serve with a cherry coulis. Use the recipe here; the result is bliss!
- Top with fresh mango slices and a few mint leaves. Exotic and delicious!

Ingredients
- 80g white chocolate chips (or baking white chocolate, chopped*)
- 200 ml heavy whipping cream
- 2 egg whites
- For serving: strawberries or raspberries, fresh mint leaves, lime or lemon zest
Instructions
- Pour the heavy whipping cream in a medium mixing bowl and place in the refrigerator for 1 hour.
- Melt white chocolate chips in the microwave, stirring every 30 seconds, until smooth and creamy. Alternatively you can melt them in a water-bath. Let cool slightly for 5 minutes.
- Beat heavy whipping cream until stiff peaks form. Gently fold it to the slightly cooled white chocolate until full incorporated.
- Beat the egg whites until stiff, then gently fold into the white chocolate. Pour into 4-6 ramekins and place in the refrigerator for minimum 3 hours. Serve with strawberries, lime zest and fresh mint leaves. Enjoy!
Notes
* If using baking white chocolate, make sure you chop it into pea-size, making sure they are roughly the same size. This will guarantee an even melting.
