Adapted from the traditional gyro, this meatless version is easy to customize in many different ways and even exists in a vegan version. It’s also healthier than the traditional recipe, yet equally delicious. Even meat lovers will fall for it. But first thing first, what is a vegetarian gyro?

A vegetarian gyro recipe

A traditional gyro is a Greek dish derived from kebab as it is made from meat cooked on a vertical rotisserie, and usually served wrapped in a soft and pillowy pitta bread alongside with raw vegetables.

In this vegetarian version, I naturally went off the meat and replaced it with some grilled vegetables. Grilled eggplant in particular brings this chewy meat-alike texture that makes every bite super delicious, while the other grilled veggies add in Mediterranean flavors.

This version is also naturally healthier than a meat-based version, loaded with fiber and unsaturated fats, high in omega 3, and easy to digest.

Ingredients for grilled veggie gyros

  • Eggplants
  • Zucchini
  • Bell peppers
  • Red onions
  • Possible variations: consider adding some Portobello mushrooms, asparagus, carrots, brocolini, sweet potato, corn, etc.

Alongside with grilled vegetables, you may want to add some fresh lettuce, raw tomatoes or sliced/diced cucumber to your gyro wrap. Serve as is, or with a side of Garlic Herb Potato Wedges or Sweet Potato Fries.

How to make yogurt-feta dip?

This dip is a no-brainer. Simply mix all the ingredients together with a fork, leaving a few chunks of feta as you go. Yogurt and feta combined together makes the dip perfectly creamy, while the use of freshly ground cumin adds refreshing flavors. For more texture, consider adding minced black olives and why not thinly minced cucumber to make it more tatziki look-alike. You get the idea: this dip is, as for the rest of the recipe, extremely forgiving and easy to customize as you go!

Can I make it vegan? Sure you can! The only thing that is not vegan in the recipe is the yogurt-feta dip. To make it vegan, replace with this homemade vegan aioli, a drizzle of tahini, or serve along with one of the dips below.

For the gyros:

  • 6 pita breads
  • 1 medium eggplant, sliced thickly lengthwise
  • 2 zucchinis, sliced thickly lengthwise
  • 2 bell peppers (red, orange, green or yellow), sliced thickly
  • 1 red onion, cut into thick wedges
  • 2 Tablespoons lemon juice
  • 2 Tablespoons olive oil
  • 3 Tablespoons water
  • 3 cloves garlic, minced
  • 2 teaspoons herbes de Provence
  • Salt and freshly ground black pepper

For the yogurt-feta dip:

  • 2 cups (500g) plain Greek yogurt
  • 2 Tablespoons feta cheese, crumbled + extra for topping
  • 1 Tablespoon fresh lemon juice
  • 2 Tablespoons olive oil
  • ½ teaspoon cumin, freshly ground
  • Fresh cilantro, chopped
  • 1 handful black olives, minced (optional)
  • Salt and freshly black pepper

Instructions

  1. For the marinade: in a small bowl, combine lemon juice, olive oil, water, garlic, herbes de Provence, salt and pepper.
  2. Place sliced vegetables in a large dish and pour the marinade over. Toss the vegetables to coat. For best results, let marinate for half an hour. Otherwise, start grilling right away.
  3. Heat grill or grill pan over medium heat. Add the vegetables and grill a couple of minutes per side, or until grill marks are formed and the vegetables are tender all the way through. As you grill, brush on the leftover marinade.
  4. For the yogurt-feta dip, mix all the ingredients together. Taste and adjust the seasoning as needed.
  5. Warm the pita breads on the grill just before assembling the sandwiches.
  6. For assembling the sandwiches, lay out the warmed pita, top each of them with equal parts of grilled vegetables and crumbled feta cheese. Drizzle with desired amount of yogurt-feta dip. Fold the gyros in half, and serve immediately.
