A very simple summer salad recipe
The list of recipe ingredients is very simple:
- Watermelon, cut into cubes.
- Cucumber. I used an English cucumber and diced it, but you could also slice it and/or use small Persian cucumbers.
- Feta cheese, crumbled.
- Red onions, thinly sliced (optional).
- Fresh mint, thinly sliced.
- Sweet dressing made of olive oil, balsamic vinegar, honey, lemon juice, salt.
To make the recipe:
- Cube the watermelon, then mix it with all the other ingredients in a large mixing bowl.
- Place in the refrigerator to chill for 30 minutes.
- Prepare the dressing in a jar, shake, and add it to the salad. It’s done!

This watermelon salad is a pretty simple and straightforward recipe. For best results, these pro tips may be helpful:
- Choose a ripe watermelon (but not overripe or it will get mushy when dicing and will release too much juice).
- Chill the salad before serving to ensure the watermelon is nice and refreshing.
- Add the dressing just before serving and toss at the very last minute before serving.
- Toss the watermelon salad very carefully.
- Leftovers. Ideally keep them separate from the dressing in the refrigerator. It’s best to eat the salad the same day though.

Ingredients
For the salad:
- ½ large watermelon, cut in cubes
- ½ English cucumbers, diced
- ¼ small red onion, thinly sliced (optional)*
- 4 ounces (110g) feta cheese, crumbled
- 3 Tablespoons fresh mint, chopped
For the dressing:
- ¼ cup (60 ml) extra-virgin olive oil
- 1 ½ Tablespoons balsamic vinegar
- 1 Tablespoon lemon juice, freshly squeezed
- 1 teaspoon honey or agave syrup
- Salt & freshly ground pepper, to taste
Instructions
- Place the watermelon in a large bowl. Add the cucumbers, red onions*, feta cheese and mint leaves. Cover the bowl and place in the refrigerator for 30 minutes to chill.
- In a small bowl, whisk together olive oil, balsamic vinegar, lemon juice, honey, salt and pepper.
- Pour the dressing over the salad and toss gently to combine. Enjoy!
Notes
* If you are a little sensitive to raw onions, you can use less or simply skip them in the recipe.
