Loaded hummus is my new obsession, and I believe you should know about it too. It’s very simple to whip up: throw hummus on a platter and garnish with an array of refreshing, Greek-inspired toppings, such as cucumber, cherry tomatoes, red onions, olives and feta.

What goes into a loaded hummus dip?

  • Hummus. I used plain hummus here, but any hummus would do (read note below).
  • Olive oil. It brings up all the Mediterranean flavors in this hummus platter. Plus, it’s a great source of Omega-3 fatty acids.
  • Feta. Use a fresh block of feta cheese, and crumble it yourself.
  • Cherry tomatoes. Use them small and/or halve them.
  • Cucumber. You’ll want to dice it into small pieces here, so that you can them lift it up with some pita bread and hummus.
  • Red onions. For sharp flavors. If you don’t like the taste of raw onions, you can skip it in the recipe or replace with marinated onions.
  • Olives. I used both green and black kalamata olives in this recipe. Pitted or unpitted, your choice!
  • Dried oregano. Use it to season all the raw veggies with some olive oil.
  • Freshly ground pepper. For a nice finish, and to bring up all the flavors.
  • Fresh herbs. For garnishing. Parsley, cilantro, mint, basil are all possible options, and I also like to mix herbs (my favorite combo: mint and cilantro).

Homemade versus store-bought hummus?

Of course I would be tempted to answer that nothing can compare with homemade hummus. But truth be told, store-bought hummus works too. Why you may ask? Simply because we’ll pimp it up with seasonings and topping that will bring it to a next new level. Bottom line: do whatever works for you and I promise it will be just fine!

How to assemble this loaded hummus dip?

  • Start with spreading your hummus onto a serving plate.
  • Mix all toppings (feta and veggies) into a bowl and season with dried oregano, salt, pepper, and olive oil.
  • Garnish the hummus with the topping, add more olive oil, chopped fresh herbs, and enjoy with warm pita wedges to dip in!

Recipe variations

There are many ways to pimp up your loaded hummus. I won’t cover all the options here, but here are just a few ideas that come to mind spontaneously:

  • Change the type of hummus you use. For instance, Roasted Red Pepper Hummus or White Bean Hummus will be a perfect base for a loaded hummus dip.
  • Make it a layered hummus dip, by adding a layer of tzatziki (creamy cucumber yogurt dip, homemade or store-bought) in between the hummus layer and the chopped raw veggies.
  • Play with the toppings. You can add marinated sun-dried tomatoes, chickpeas, red peppers, pine nuts, pumpkin seeds, etc.

  • 1 portion Roasted Garlic Hummus
  • ½ teaspoon paprika (optional)
  • ½ cup (130g) feta cheese, diced or crumbled
  • ½ English cucumber, diced
  • 1 cup (150g) cherry tomatoes, halved
  • ½ cup (60g) pitted kalamata olives, chopped
  • ½ cup (60g) pitted green olives, chopped
  • ¼ red onion, thinly sliced
  • ¼ teaspoon dried oregano (optional)
  • Salt and freshly ground pepper, to taste
  • 1 Tablespoon olive oil + more for serving
  • Fresh parsley (or other fresh herbs)**, for serving

Instructions

  1. Spread the hummus into a uniform layer in a medium serving dish or plate.* Then, create swirls with the back of a spoon, sprinkle smoked paprika over if using, and drizzle with olive oil. Set aside.
  2. In a medium bowl, add diced (or crumbled) feta, cucumber, cherry tomatoes, black kalamata olives, green olives, and red onions. Add oregano, salt, pepper, and toss with olive oil.
  3. Garnish the hummus with the Greek salad, and add fresh herbs.** Drizzle more olive oil all over, add freshly ground pepper, and serve with warm pita bread wedges or with pita chips for dipping. Enjoy!

* For reference, my serving tray is 11 x 7 inches (28 x 18 xm).

** Feel free to garnish with fresh herbs of choice: parsley or basil for a Greek-style hummus dip ; cilantro, dill, mint for other refreshing flavors.
