French Spice Cake “Pain d’épices”

Back to basics today with an old French classic: the famous spice cake “pain d’épices”, consisting of rye flour, honey and spices.

Ingredients

  • 2/3 cup (210g) honey
  • 1 cup (110g) rye flour
  • 3/4 cup (110g) all-purpose flour
  • 1/2 cup (110g) cold plain milk
  • 3 Tablespoons (40g) caster sugar
  • 1 pinch of salt
  • 2 teaspoons (12g) baking powder
  • 2 large eggs
  • 1/3 cup (75g) melted butter
  • 1 teaspoon lemon zests
  • 1 teaspoon orange zests
  • 1 teaspoon 5 spice powder*
  • 1 teaspoon cinnamon

Instructions

  1. Preheat the oven to 300°F (150°C). Grease a loaf pan with butter.
  2. Pour honey in a large bowl. Add rye flour and mix until well combined, using a hand mixer or a stand mixer with a paddle attachment on low speed.
  3. Incorporate one at a time all-purpose flour, cold milk, sugar, salt, baking powder, eggs and melted butter, stirring well after each addition. Add the spices and stir well.
  4. Pour the batter into the prepared loaf pan and bake for about 50 minutes. When the cake is lukewarm, unmold it and transfer to a wire rack to cool completely.
