On those lazy days, I like to make savory toasts for a low-fuss dinner, a quick lunch, or even for breakfast. Mushroom toasts have long been one of my favorite fall treats. Back when I lived in Sweden a few years ago, we would go mushroom picking, and then come back home and prepare some delicious yet ultra simple toasts with sourdough bread, wild mushrooms and garlic.

This mushroom toast recipe is directly inspired from the ones I used to eat in Sweden, although I made it even more satisfying, adding a layer of hummus between the bread and the sautéed mushrooms with garlic and thyme. So good!

Recipe ingredients and substitutes

  • Bread. Use sourdough bread preferably, or one of the no-knead bread recipes I shared below. Slice into thick slices.
  • Mushrooms. Any kind would do, but for the maximum of flavors, I recommend a blend of wild mushrooms and white-brown button mushrooms.
  • Hummus. You can either make your own hummus or go for a store-bought hummus for a quicker version.
  • Garlic. It’s a key ingredient of the recipe, as it brings up all the flavors. Garlic and mushrooms are like best friends, always.
  • Thyme. I love the addition of thyme with mushroom and garlic. Instead of thyme, you can use parsley, finely chopped.
  • Olive oil. You need some olive oil to toast the bread and sauté the mushrooms.
  • Salt and pepper. The right seasoning is key in a savory toast. Always taste and adjust seasoning as needed.
  • Pine nuts, toasted. They’re optional but add a little crispy touch to the toast that is simply irresistible.

How to make mushroom toasts?

  1. Start with slicing and toasting the bread with olive oil in a pan, flipping it once.
  2. Sauté the mushrooms with olive oil on medium-high heat, then add garlic and thyme. Season with salt and freshly ground pepper.
  3. Assemble the toasts: spread the hummus, add garlic mushrooms and toast, and voilà!

Are these mushroom toasts healthy?

They’re pretty much healthy, yes. They’re loaded with veggies and legumes, which makes fiber-rich and a great source of plant-based protein, while being overall nourishing and very satisfying. Note also that these mushroom toasts are naturally vegetarian, and actually even vegan and dairy-free.

Variations around the recipe

There are so many ways you can twist this hummus mushroom toast, making it your very own version. For instance, you can spice up the hummus (cumin, paprika, curry…), or use a white bean hummus instead (simply replace the chickpeas with white beans in the recipe). If in season, try to make these toasts using chanterelles mushrooms exclusively, and sauté them in butter instead of oil (for a non vegan version) – the result is exquisite! Instead of pine nuts, you can add some toasted hazelnuts or walnuts, roughly chopped. And why not serving with a sunny side up egg on top of the toast just before serving to make a beautiful savory breakfast?

What bread to use for these mushroom toasts?

Ideally, you’ll want to use a sourdough bread, maybe a multigrain or one with walnuts. But if you want to go the extra mile – which I recommend – you can make the bread from scratch, using one of the below no-knead bread recipes (yes you heard me right, NO KNEAD!):

Ingredients

  • ½ cup (125g) creamy garlic hummus*
  • 4 slices of bread, cut into thick slices
  • 2 Tablespoons olive oil, divided
  • 8 ounces (225g) wild mushrooms, sliced**
  • 2 small cloves garlic, minced
  • 23 thyme sprigs
  • Salt and freshly ground pepper
  • 2 Tablespoons pine nuts, toasted

Instructions

  1. Make the hummus. Make one batch of garlic hummus. Set aside ½ cup for this recipe (see note 1).
  2. For the bread, heat 1 Tablespoon of oil in a large skillet over medium heat, then toast the slices of bread, 1-2 minutes on each side. Transfer the bread to a clean plat, wipe the skillet and reuse it.
  3. For the mushrooms, heat 1 Tablespoon of oil in the cleaned skillet placed over medium-high heat. Add mushrooms and sauté for about 4 to 5 minutes, stirring often. Add garlic, stir to coat mushrooms, and sauté for one more minute, until garlic is fragrant. Season well with salt and pepper. Remove from heat.
  4. Assemble the toast. Spread the hummus generously onto the slices of bread, top with garlic mushrooms, and garnish with toasted pine nuts and thyme. Add more salt and pepper, and enjoy!

Notes

* For homemade garlic hummus, use this recipe (the best, in my humble opinion).

** You can use a mix of shiitake, chanterelles, button, and/or oyster mushrooms.
