Garlic Mushroom Toast with Hummus makes a simple, healthy savory snack, loaded with fall flavors. It’s quick, easy to make, and never disappoints. 

Ingredients

  • ½ cup (125g) creamy garlic hummus*
  • 4 slices of bread, cut into thick slices
  • 2 Tablespoons olive oil, divided
  • 8 ounces (225g) wild mushrooms, sliced**
  • 2 small cloves garlic, minced
  • 23 thyme sprigs
  • Salt and freshly ground pepper
  • 2 Tablespoons pine nuts, toasted

Instructions

  1. Make the hummus. Make one batch of garlic hummus. Set aside ½ cup for this recipe (see note 1).
  2. For the bread, heat 1 Tablespoon of oil in a large skillet over medium heat, then toast the slices of bread, 1-2 minutes on each side. Transfer the bread to a clean plat, wipe the skillet and reuse it.
  3. For the mushrooms, heat 1 Tablespoon of oil in the cleaned skillet placed over medium-high heat. Add mushrooms and sauté for about 4 to 5 minutes, stirring often. Add garlic, stir to coat mushrooms, and sauté for one more minute, until garlic is fragrant. Season well with salt and pepper. Remove from heat.
  4. Assemble the toast. Spread the hummus generously onto the slices of bread, top with garlic mushrooms, and garnish with toasted pine nuts and thyme. Add more salt and pepper, and enjoy!

Notes

* For homemade garlic hummus, use this recipe (the best, in my humble opinion).

** You can use a mix of shiitake, chanterelles, button, and/or oyster mushrooms.
