I got the idea of this cheese appetizer a couple of months ago, while spending time with friends in a cabin in Quebec. With the bare minimum equipment and toddlers running around, we didn’t cook anything fancy but managed to make every meal festive around pancakes, tacos and fun appetizer ideas.

Among the recipes we cooked in the cabin, my friend once whipped up this goat cheese pyramid appetizer on a whim, using a pyramid of Chavroux cheese, some shallots, olive oil and fresh herbs. I was hooked immediately. It’s loaded with flavors and it works for pretty much any occasion year-round. I’m happy to pass along the recipe so you can make it too!

An easy appetizer idea

The list of ingredients is pretty basic: a block of fresh goat cheese, ideally Chavroux or ‘Chavrie’ (see below), and some seasonings. Fresh herbs, shallots, olive oil, and freshly ground pepper and salt are pretty much all you need. Place everything in a serving plate and dip any crackers of choice or small slices of baguettes, slightly toasted. It doesn’t get easier than that!

What is Chavroux and possible substitutes

Chavroux is a soft French cheese packed in pyramid-shaped small containers or cylinders. Made from 100% goat’s milk, it has a melt-in-the-mouth taste texture resembling to cream cheese. You can find it in American grocery stores under the name of ‘Chavrie’.

Substitutes. If Chavroux, Chavrie or a similar product is not available where you live, consider using fresh goat cheese instead. Any shape will do, no need to recrate the pyramid shape.

A 2-minute homemade ‘Chavrie’. Although the original recipe is prepared with 100% goat’s milk, you can re-create a similar version in terms of texture by mixing together plain cream cheese and fresh goat cheese in equal portions (50-50%). You can then place in a mold (any shape) and invert in a shallow serving plate. Note that the goat cheese flavor will be more subtle in this version, but the texture will be equally smooth and silky as the one you find in the original Chavroux.

How to serve goat cheese pyramid appetizer?

This Chavroux pyramid works pretty much like a dip. This means you can spread over plain or multiseed crackers, or some slices of baguettes, slightly toasted (my favorite option). You could also think about other options, such as pita bread/pita chips, or even some raw veggies (cucumbers, carrots, bell peppers, etc.).

How and for how long can you store it?

Because it’s so quick and easy to make, I always recommend to make this goat cheese pyramid just before serving. It also ensures spring onions and shallots remain crisp with a fresh and sharp flavor.

If you really need to make it in advance, I recommend to keep chopped onions and shallots together in a separate container, then assemble the recipe just before serving, pouring the olive oil at the last minute. Leftovers can be kept in an airtight container in the refrigerator for up to two days.

  • 1 pyramid of Chavroux (known under the name of ‘Chavrie’ in the US)*
  • 3 spring onions, thinly sliced
  • 1 or 2 small shallots, minced
  • ¼ cup (60 ml) extra-virgin olive oil
  • Timut black pepper, freshly ground
  • Coarse salt

Instructions

  1. Invert a pyramid of goat cheese ‘Chavrie’ onto a small shallow plate or bowl.
  2. Top and garnish around with spring onions and shallots, and pour the olive oil on top, letting it fall into the bottom of the plate. For best result, season with freshly ground Timut black pepper and coarse salt just before serving.
  3. Enjoy with small baguette toasts, lightly drizzled with olive oil.

Notes

* You can replace ‘Chavrie’ with any fresh goat cheese of your choice (any shape will do). My favorite option to recreate the smooth texture of the ‘Chavrie’ consists in mixing together 3.5 oz (100g) of plain cream cheese and 3.5 oz (100g) of fresh goat cheese. Shape into a mold of your choice before inverting onto the serving plate.
