Can we all agree that sweet potato fries are simply the BEST? When done right, they’re crispy-addictive and loaded with irresistible sweet and salty flavors. Oven-baked, with just a bunch of ingredients, this recipe is accessible to everyone. There is just nothing not to love about it.

In this recipe, I paired the sweet potato fries with a simple avocado dip instead of regular ketchup. The healthy fats contained in the avocado also helps to better metabolize the beta-carotene from the sweet potatoes. But nutrition aside, sweet potatoes and avocadoes are just a perfect combo everyone loves!

The recipe ingredients

  • Sweet potatoes. This recipe calls for 2 large sweet potatoes (about 1lb/450g), but you can easily scale this recipe, adjusting the seasoning.
  • Olive oil. Loaded with healthy fats, olive oil is a healthier choice, but avocado oil would work too. For the Five Guys lovers, you can use peanut oil instead!
  • Paprika. It adds some smoky flavors to the charred sweet potato fries.
  • Garlic powder. For depth of flavor. You could also use chopped garlic, either in addition to the garlic powder or instead of.
  • Avocado. Choose a ripe avocado for the dip, for more flavors.
  • Cilantro. The use of cilantro is completely optional in this recipe, but work well, sprinkled over the sweet potatoes and the avocado dip.

How to make oven-baked sweet potato fries

This recipe comes together in just a few simple steps:

  • Cut the sweet potatoes into long, thin sticks.
  • Toss with olive oil and seasoning.
  • Arrange onto a baking sheet in an even layer, and bake in a hot oven (important)! Fries are ready when super crispy and slightly charred in the extremities.

While fries are baking, prepare the avocado dip by combining all the ingredients together in a food processor. Sprinkle additional sea salt onto the fries, and dip into the avocado sauce. Yummy!

Pro tips for crispy fries

  • Cut the sweet potatoes into thin matchsticks, and cut the very long fries in half, crosswise. The shorter fries get much crispier!
  • Leave the skin on. It’s up to you to peel the sweet potato skins, but best is to keep it. Simply scrub each sweet potato well, and cut into sticks. The skin is packed with fiber, and I think it makes the fries crispier!
  • Don’t use too much oil. If your sweet potatoes are not too large or weigh less than 1 lb (450g), adjust the quantity of oil. It’s always better to use a little less than a little too much, or you will end up with soggy fries.
  • Arrange the fries in the oven, leaving enough space between them while baking, and don’t forget to toss them at mid-baking or around that time.
  • Ensure the oven is very hot before you add your fries.
  • Bake in the upper level of the oven. I recommend the upper third level for best results. Because it’s very high in the oven, always keep an eye when baking to avoid ending up with burned sweet potato fries.

Team cornstarch or not?

Some recipes suggest to coat the sweet potato fries with a mixture of equal amount of cornstarch and water (2 Tablespoons each) as a little trick to get crispier fries. I tried and didn’t find it strictly necessary, as long as the oven temperature is very hot before you add the fries. While I prefer the traditional method, feel free to experiment and let me know how you like your fries best!

Is this recipe healthy?

Let’s not forget that we’re talking about fries here. And whether they’re made with potatoes or sweet potatoes, fried or oven-baked, they’re not the healthiest foods on earth. That being said, this recipe gathers a number of properties that are worth mentioning.

First of all, these fries are prepared with sweet potatoes, which unlike regular potatoes, offer great nutritional properties, such as dietary fibers and beta-carotene. They are then baked in the oven (not fried), which makes them less greasy than regular fries. Also, unlike cheap fries that use other oils, these ones are prepared with olive oil, which is loaded with antioxidants. Lastly, when paired with healthy fats from the avocado, the beta-carotene contained in sweet potatoes is better metabolized.

Serving suggestions

Dip variations: Feel free to swap or complete the avocado dip with other dips of choice. This vegan aioli for instance is fantastic, but you can also serve with Dijon mustard, ketchup, mayonnaise, or Chipotle sauce.

For the sweet potato fries:

  • 2 large sweet potatoes, cut into sticks
  • 2 Tablespoons olive oil*
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • Salt & black pepper
  • Extra sea salt (for serving)
  • Fresh cilantro, chopped (for serving)

Avocado dip:

  • 2 garlic cloves, crushed
  • 1 ripe avocado
  • ¼ cup (60 ml) plain yogurt
  • 1 Tablespoon fresh lemon juice
  • Salt and freshly ground pepper

Instructions

  1. Preheat the oven to 425°F (220°C), and arrange the oven rack in the upper third of the oven. Line a baking sheet with parchment paper. Set aside.
  2. Slice the sweet potatoes lengthwise into sticks, about ¼ to ½ inch wide (around 1 cm).
  3. Toss them with olive oil in a large mixing bowl. Season with paprika, garlic, salt and pepper and toss well.**
  4. Transfer the sweet potatoes onto the prepared baking sheet, in a single layer, and leaving a little space around each one.
  5. Bake until brown and crisp on the bottom, about 10-15 minutes, then flip and bake until the other side is crisp, about 10 minutes.
  6. For the avocado dip, add garlic in a food processor. Pulse until minced, then add the ripe avocado, yogurt, fresh lemon juice, and mix until smooth. Season with salt and pepper, add some chopped cilantro, and mix again.
  7. Sprinkle some sea salt and chopped cilantro over the fries, and serve with the avocado dip. Enjoy!

Notes

* If your sweet potatoes are not very large, adjust the quantity of oil you are using. You don’t want to use too much oil or your fries will turn oily and won’t become crispy.

** For even crispier fries, you can coat the fries in an additional mixture consisting of equal part of cornstarch and water (about 2 Tablespoons each).
