  • Key limes. Both the juice and the zest are required in this recipe. If you can’t find your hands on key limes, just go for regular limes.

How to make key lime pie popsicles?

The recipe is very straight-forward and takes about 10 minutes from start to finish, plus some freezing time.

  1. Start with combining all the ingredients for the filling in a measuring bowl, and pour onto the popsicle molds up to ¾ full.
  2. Then prepare the graham crackers mixture, and add it on top of the popsicles.
  3. Add the popsicle sticks and pop them in the freezer for 4 hours. That’s it!

Can I make them gluten-free?

Absolutely! You can either use gluten-free graham crackers or you can skip the graham crackers part for a quicker and healthier version.

How to remove popsicles from molds?

To unmold, turn the popsicle molds sideways and run them under lukewarm water for 5 -15 seconds (sometimes a bit longer, but make sure you don’t melt the pops). Then, slowly and carefully wiggle sticks and remove each popsicle.

How many limes will I need for the recipe? This depends on the size of your limes. You will need about 4 to 5 small key lime to get about ⅓ cup lime juice, or 3 to 4 regular limes. For the zest, one or two limes should be enough.

Can I use bottled lime juice? Yes you can. Just keep in mind that lime juice extracted from fresh limes is stronger. Also, even if you use bottled lime juice, you will still need the lime zest, which is where the key lime popsicles get the most flavors.

May I use unsweetened condensed milk instead? I recommend sweetened condensed milk, since it’s the only sweetener we use in the recipe. That being said, you can use unsweetened condensed milk and add about 1 or 2 Tablespoons honey or agave syrup to the creamy mixture.

Which popsicles molds to use? There are many types of popsicle molds available, the most common ones being the silicon and the metal ones. In the middle, the aluminium covering popsicle molds are a great alternative. They are the perfect reasonable size and hold the popsicle sticks up straight perfectly.

What if I don’t have popsicle molds? You can still make these key lime popsicles using a classic muffin tin. Then poke your popsicle sticks upright in the center and freeze.

  • 1 ½ cup (12 ounces / 340g) plain yogurt*
  • ½ cup (150g) condensed milk
  • 2 teaspoons lime zest**
  • ⅓ cup (80 ml) key lime juice***
  • ⅓ cup (40g) graham crackers
  • 2 Tablespoons unsalted butter, melted

Instructions

  1. Mix condensed milk, yogurt, key lime juice and lime zest together in a measuring or mixing bowl with a whisk (you can also use a blender).
  2. Pulse the graham crackers a few times in a food processor (or smash them in a plastic bag with a rolling pin or other heavy tool). Add the melted butter and combine. Set aside.
  3. Carefully pour the creamy mixture into popsicle molds, up to ¾ full (you can use a fennel to make it easier).
  4. Spoon in graham cracker crust mixture to finish filling each mold. Press crumbs down slightly and insert the popsicle sticks (or the top of mold, depending on the popsicle mold you are using).
  5. Freeze on a level surface for at least 4 hours. To unmold, turn the popsicle molds sideways and run them under warm water for 5 -15 seconds. Enjoy!

Notes

* I recommend full fat Greek yogurt for best results with a creamy texture, but full fat plain yogurt will work too.

** Useful tip: always lime the zest of limes before juicing them; it’s almost impossible to zest them once they’re juiced already.

*** I used key limes for this recipe, but if they are hard to find, you can replace them with regular limes.
