What kind of puff pastry should I use?

Fresh or frozen puff pastry work for this recipe. If choosing frozen, leave to thaw in the refrigerator overnight before using. I recommend puff pastry in a rectangular shape if possible. This will ensure equal size Christmas trees. If puff pastry discs are your only option, cut them into a large rectangle and use cookie cutters to cut out shapes out of the scraps. This way, nothing goes to waste, or almost.

How to shape kids pizza Christmas trees?

  • Using a large knife or a pizza roller, cut the puff pastry into strips on the short side of your puff pastry. Each strip will be around 1-inch (2,5 cm) width or slightly less.
  • Carefully lift one pizza puff pastry strip and lay in flat in front of you.
  • Fold it upside down into a Christmas tree shape, making the bottom fold longer than the other ones, the last one being very short (it’s the top of the tree). The Christmas trees usually come together in 3 or 4 folds.
  • Insert a stick down through the middle to hold the tree, and lay them flat onto a baking sheet.

Storing and make-ahead instructions

You can make these pizza Christmas trees ahead of time. Instead of brushing with egg wash, flash-freeze on a baking sheet for 1 hour, then transfer to a freezing bag.   • 2 sheets puff pastry
  • 2 Tablespoons pizza sauce*
  • 2 Tablespoons green pesto*
  • 1.5 ounces (45g) grated cheese
  • 1 egg yolk, for brushing
  • Sesame seeds, for decoration

Instructions

  1. Preheat the oven to 350°F (180°C) and line a large baking sheet with parchment paper.
  2. Roll out a puff pastry over a sheet of parchment paper. Spread tomato sauce on one side, green pesto on the other side, and sprinkle grated cheese over in an even layer. Cover with the second puff pastry, making the extremities fit.
  3. Using a large knife or a pizza roller, cut the puff pastry into strips, about 1-inch (2,5 cm) width. Then, using your hands, fold the strips to make the Christmas tree shape, and insert a stick down through the middle to hold the tree. Transfer the Christmas trees to the prepared baking sheet.
  4. Brush with egg wash, sprinkle some sesame seeds, and bake for about 20-25 minutes, or until golden. Re-shape slightly if needed to ensure they keep their Christmas tree shape. Let cool for 5 minutes, and enjoy!

Notes

* Alternatively, you can use only one filling, and also replace with various fillings of choice (red pesto, tapenade, Boursin, etc.).
