This loaded hummus dip is an easy crowd-pleasing appetizer, with lots of textures and refreshing flavors. It consists of a generous layer of roasted garlic hummus spread onto a platter and topped with Greek-style toppings and fresh herbs. Serve with pita bread.

  • 1 portion Roasted Garlic Hummus
  • ½ teaspoon paprika (optional)
  • ½ cup (130g) feta cheese, diced or crumbled
  • ½ English cucumber, diced
  • 1 cup (150g) cherry tomatoes, halved
  • ½ cup (60g) pitted kalamata olives, chopped
  • ½ cup (60g) pitted green olives, chopped
  • ¼ red onion, thinly sliced
  • ¼ teaspoon dried oregano (optional)
  • Salt and freshly ground pepper, to taste
  • 1 Tablespoon olive oil + more for serving
  • Fresh parsley (or other fresh herbs)**, for serving

Instructions

  1. Spread the hummus into a uniform layer in a medium serving dish or plate.* Then, create swirls with the back of a spoon, sprinkle smoked paprika over if using, and drizzle with olive oil. Set aside.
  2. In a medium bowl, add diced (or crumbled) feta, cucumber, cherry tomatoes, black kalamata olives, green olives, and red onions. Add oregano, salt, pepper, and toss with olive oil.
  3. Garnish the hummus with the Greek salad, and add fresh herbs.** Drizzle more olive oil all over, add freshly ground pepper, and serve with warm pita bread wedges or with pita chips for dipping. Enjoy!

Notes

* For reference, my serving tray is 11 x 7 inches (28 x 18 xm).

** Feel free to garnish with fresh herbs of choice: parsley or basil for a Greek-style hummus dip ; cilantro, dill, mint for other refreshing flavors.
