On a hot summer day, all we wish for is a delicious fruity popsicle we can enjoy by the pool. You may or may not have the pool, but you can make popsicles from scratch! All you need is a popsicle mold, some summer fruits, and a creamy base (dairy or not dairy). Super easy, I promise!
These popsicles – or creamsicles as we sometimes call them – also make a great nutritious treat for kids, and you won’t feel guilty feeding them a store-purchased ice cream, usually filled with sugars and artificial ingredients. For a non-vegan version, simply replace coconut milk with yogurt!

The ingredients you need
- Strawberries, fresh or frozen. Unless you own a very strong blender or food processor, I find it easier to use fresh strawberries for this recipe. They will purée more easily and yield a smoother texture. That being said, the recipe works pretty well with frozen fruits too.
- Coconut milk. Full-fat coconut milk is best, as it gives a creamier popsicle. You could also use light coconut milk but be aware that you will end up with icier, less creamy popsicles.
- Maple syrup or agave syrup (optional). If you are using very ripe strawberries and are not so much of a sweet tooth, you can definitely skip the maple syrup entirely. For a non-vegan version, you can replace with honey too.
Other possible add-ons: you can add 1 Tablespoon lime or lemon juice to the puréed strawberries. Additionally, you may want to fill the top part of your popsicle mold with some cookie crumbs to make the popsicle look like a strawberry cheesecake popsicle!
Strawberry coconut popsicles: 3 ways
There are 3 possible ways to make strawberry coconut popsicles: marbled (as shown on the photos), layered and creamy. Do what works for you; all of them taste delicious!
For a layered popsicle, keep the coconut milk mixture and the strawberry puree separated and layer them into the popsicle molds, freezing the molds for about 10 minutes before adding the next layer. This is important to prevent the layers from blending. You can create red and white popsicles by keeping the strawberry puree and coconut milk separated, or pink and white popsicles by adding a little bit of coconut milk to the strawberry puree.
For a marbled popsicle, layer the sweetened coconut milk and the strawberry-coconut mixture into the popsicle molds up to the top, then insert a toothpick or a knife to create some swirls. Like for the layered version, you can make red and white popsicles or pink and white popsicles, depending on if you mix some of the coconut milk with the strawberry puree.
For a creamy popsicle, simply mix the 3 ingredients together (strawberries, coconut milk, maple syrup) and divide evenly into the popsicle molds. This is a quicker and easier way to make these strawberry coconut popsicles, but always creamy and delicious!
IMPORTANT! Do not forget to insert the wooden sticks before freezing for a minimum of 4 hours or longer (ideally overnight).
How to get the perfect marble effect?
Not to worry, it’s easier than it seems! And most importantly, you are not looking for perfection here (the result will be different every single time and it’s ok). The idea is to allow the coconut and the strawberry layers to blend in partially, creating some waves of colors here and there. I usually start with pouring two layers of colors, then I plunge a wooden stick to swirl gently in a zig-zag motion. Repeat with the remaining layers, and do not overswirl.
FAQ
- Which popsicles molds to use? There are many types of popsicle molds available, the most common ones being silicon and the metal ones. In the middle, the aluminium covering popsicle molds are a great alternative. They are the perfect reasonable size and hold the popsicle sticks up straight perfectly.
- What if I don’t have popsicles molds? This is a question I get often. Great news: you can still make popsicles even if you don’t have a popsicle mold, using a muffin mold instead, either a silicone one or a traditional metal one filled with paper cases. If doing so, let partially freeze before inserting the sticks to ensure they stay upright.
- How to remove the popsicles from the mold? Simply run the mold under hot water for 15-30 seconds, then gently tug on the popsicle stick.
- For how long can I store popsicles in the freezer? Once the popsicles are frozen, carefully remove them from the molds by running them under water for a few seconds. Then, place on a large baking sheet and freeze for about 20 minutes until completely frozen again before transferring into a freezer bag next to each other to prevent freezer burn. The strawberry popsicles will stay fresh in your freezer for about one month.
Flavor variations
These vegan marble popsicles are delicious with strawberries, but they also work with different fruit options. You can for instance use any other berries. Think blueberries, raspberries, blackberries, or even a mix of berries of your choice! Some also love to add some strawberry slices into the popsicle molds for a beautiful visual effect. You can also try to make these popsicles in a tropical version, using pineapples or mangoes for instance.

Ingredients
- 3 cups strawberries, washed and hulled
- 1 can (13.5oz/400 ml) coconut milk, full fat
- 3 Tablespoons maple or agave syrup, divided
Instructions
- Combine the coconut milk with half of the maple syrup and stir well. Set aside.
- Place strawberries with the remaining maple syrup in a food processor. Add about one third of the sweetened coconut milk, and blend until smooth and combined.
- Layer the strawberry puree and the sweetened coconut milk into the popsicle molds and use a toothpick or a knife to create a marble effect*.
- Add the popsicle sticks to the mold and place in the freezer for a minimum of 4 hours or overnight.
- Once frozen, run the mold under hot water for 10-30 seconds then gently tug on the popsicle sticks to remove them.

* For a creamy popsicle (instead of a marbled one), combine coconut milk and strawberry puree, and divide evenly between the molds.
