Marbled strawberry coconut popsicles make a simple and very refreshing summer treat with only 3 ingredients. Vegan and naturally sweetened, they’re prepared with strawberries and creamy coconut milk swirled together to create a beautiful marble effect.

Ingredients

  • 3 cups strawberries, washed and hulled
  • 1 can (13.5oz/400 ml) coconut milk, full fat
  • 3 Tablespoons maple or agave syrup, divided

Instructions

  1. Combine the coconut milk with half of the maple syrup and stir well. Set aside.
  2. Place strawberries with the remaining maple syrup in a food processor. Add about one third of the sweetened coconut milk, and blend until smooth and combined.
  3. Layer the strawberry puree and the sweetened coconut milk into the popsicle molds and use a toothpick or a knife to create a marble effect*.
  4. Add the popsicle sticks to the mold and place in the freezer for a minimum of 4 hours or overnight.
  5. Once frozen, run the mold under hot water for 10-30 seconds then gently tug on the popsicle sticks to remove them.

Notes

* For a creamy popsicle (instead of a marbled one), combine coconut milk and strawberry puree, and divide evenly between the molds.
