This grilled cheese recipe was born by accident. As I was working in a local coffee shop the other day, I saw a few customers ordering a similar grilled cheese and I started to crave it too. I’m proud to report I managed to resist the temptation to order one. Instead I got home, grabbed a loaf of sourdough bread and made my own grilled-cheese for lunch. It was so good I needed to share the recipe with you ASAP!
This 100% vegetarian Mediterranean grilled cheese is prepared with very simple ingredients (baby spinach, cherry tomatoes, avocados, and melting mozzarella cheese), tucked in between two large slices of sourdough bread generously spread with pesto sauce. Quick, easy, and super delicious!

What goes into this Mediterranean grilled cheese?
- Bread. Choose a bread of quality, ideally a plain sourdough bread, and slice it thick. Occasionally, white bread is ok too!
- Pesto sauce. I used ready-to-use basil pesto to spread on the inside of the bread slices.
- Mozzarella slices. If possible, choose Mozzarella sandwich slices or other similar sandwich cheese slices. Shredded cheese such as white cheddar can work too!
- Avocado. Make sure your avocado is ripe enough but not too soft or mushy.
- Baby spinach. The smaller the leaves the better so they can fit in the grilled cheese nicely. Also, you may want to cut these extra long stems if needed. Alternatively, use arugula salad.
- Cherry tomatoes. I like to cut them in half so they fit well in the grilled cheese. You could also very well replace with a large sliced tomato instead.
- Other ingredients: butter (to spread on the outside of the toast before grilling), salt and pepper (seasoning is key). You can also add a few basil leaves to bring additional refreshing flavors to your grilled cheese.
Pro tips for a perfect grilled cheese
I said it before for my Apple and French Onion Grilled Cheese, but here are a few things to take into consideration when making a grilled cheese:
- Choose the bread carefully, ideally a sourdough bread.
- Use the right cheese. I used sliced Mozzarella specifically tailored for sandwiches, but any other similar cheese, sliced or shredded could do too.
- Spread butter on the outside of the bread slices to ensure a nice golden color when cooking.
- Do not overload your sandwich! This is the #1 rule for success when cooking your grilled cheese. I recommend to stack all the ingredients on one side of the bread only, keeping the other slice simply spread with pesto and topped with cheese.
- Cook your grilled cheese on medium-low heat and adjust it as you cook, ensuring that the bread toasts at the same rate that the cheese melts and doesn’t burn! You can also finish up the cooking in a warm oven (this will prevent bread from browning and allow cheese to be fully melted).

Ingredients
- 8 thick slices of sourdough bread
- 2 Tablespoons unsalted butter + extra for cooking
- 4 Tablespoons basil pesto
- 8 mozzarella slices, for sandwiches
- 1–2 handful(s) baby spinach
- 6–8 cherry tomatoes, halved
- 1 avocado, stoned and sliced
- Salt and freshly ground pepper
Instructions
- Place bread slices of each sandwich side by side (top and bottom part of each sandwich).
- Butter the outside of each slice of bread, and turn upside down. On the inside, spread some basil pesto and add the cheese slices.
- Now, layer the ingredients on only one side of the sandwich (baby spinach, cherry tomatoes, sliced avocado). Season with salt and pepper, and carefully top with the other half of bread, making sure all the ingredients fit inside the sandwich nicely.
- Heat butter in a skillet over medium-low heat. Place sandwiches in the pan and toast, carefully flipping when perfectly golden brown and cheese begins to melt.** Cut in half and enjoy!
Notes
* Note that quantities are approximative and depend on your bread slices size. You can add more or less of any of the listed ingredients above. Just keep in mind not to overload your sandwich!
** To prevent bread from getting too dark but still have a fully melting cheese, toast gently in the skillet, and then place in a warm oven until cheese is completely melted.
