Mediterranean avocado gilled cheese is a quick warm sandwich on the go you can make anytime of the year. It features some mashed avocado and it’s loaded with delicious Mediterranean and cheesy flavors.

Ingredients

  • 8 thick slices of sourdough bread
  • 2 Tablespoons unsalted butter + extra for cooking
  • 4 Tablespoons basil pesto
  • 8 mozzarella slices, for sandwiches
  • 12 handful(s) baby spinach
  • 68 cherry tomatoes, halved
  • 1 avocado, stoned and sliced
  • Salt and freshly ground pepper

Instructions

  1. Place bread slices of each sandwich side by side (top and bottom part of each sandwich).
  2. Butter the outside of each slice of bread, and turn upside down. On the inside, spread some basil pesto and add the cheese slices.
  3. Now, layer the ingredients on only one side of the sandwich (baby spinach, cherry tomatoes, sliced avocado). Season with salt and pepper, and carefully top with the other half of bread, making sure all the ingredients fit inside the sandwich nicely.
  4. Heat butter in a skillet over medium-low heat. Place sandwiches in the pan and toast, carefully flipping when perfectly golden brown and cheese begins to melt.** Cut in half and enjoy!

Notes

* Note that quantities are approximative and depend on your bread slices size. You can add more or less of any of the listed ingredients above. Just keep in mind not to overload your sandwich!

** To prevent bread from getting too dark but still have a fully melting cheese, toast gently in the skillet, and then place in a warm oven until cheese is completely melted.
