As you probably know now if you’ve been following me for a while, I am very serious when it comes to cookies. The holidays are upon us and for the occasion I imagined a cookie that would be perfect to give thanks. So for this November Cookie Edition, picture a very seasonal cookie with lots of pecans, large chocolate chunks, and a splash of Bourbon to make it even more special. It would also be a perfect edible gift for the holidays, think about it.
When it comes to the texture, expect the right balance of crunchy, soft and chewy, everything wrapped in a big, fat cookie, that is quick and easy to prepare. Are you ready to jump in and make the recipe?
Key ingredients
- Pecans – I used both whole and chopped pecans to give my cookies an enticing look with a very crunchy texture.
- Dark chocolate – I find that dark chocolate pairs well with pecans. Preferably, use bittersweet dark chocolate and chop it yourself with a knife so you have irregular chocolate chunk sizes. When you accidentally bite onto a bigger chocolate chunk, it’s just twice as much as pleasure!
- Bourbon – Yes, there is whiskey in my cookies!
As for the other ingredients, they are the classic ingredients you use in a cookie recipe: all-purpose flour, butter (I use it melted here), sugar, eggs and vanilla. For the sugar, you can reduce the quantities up to 2/3 of the recommended ones, but always make sure you respect the white sugar/brown sugar ratio.
Does it make them cookies for adult only?
The answer is no. The fact that the cookies are baked make them perfectly safe for your little ones. So don’t worry if your kids grab one or two on their way out to the kitchen, as long as they stick to their glass of milk to go with it.
When it comes to the choice of whiskey for your cookies, it is really up to you and a matter of personal taste. Now if you ask me, I went for Koval, which I discovered through my partner Peugeot Saveurs a couple of years ago. Also, when it comes to the adult party, I served these festive cookies with a glass of bourbon, using my beautiful Whiskey tasting set. Each set consists of one glass and one chilling base, coming along in an elegant design (side note: it could be a great Christmas gift!).

Ingredients
- 2 1/4 cups (270g) all-purpose flour
- 1 1/2 teaspoon cornstarch
- 1/2 teaspoon baking soda
- 1 pinch of salt
- 3/4 cup (180g) unsalted butter, melted
- 3/4 cup (135g) light brown sugar
- 1/3 cup (70g) granulated sugar
- 1 large egg
- 1 yolk
- 2 Tablespoons Bourbon
- 2 teaspoons vanilla extract
- 1/2 cup (75g) pecans
- 5.3 ounces (150g) dark chocolate chunks
Instructions
- Preheat the oven to 325°F (160°C) and line two large cookie sheets with parchment paper.
- In a large bowl, whisk together the flour, cornstarch, baking soda and salt.
- Pour melted butter into a medium-sized bowl. Add in brown sugar, granulated sugar and whisk vigorously until no sugar lumps remain. Whisk the egg and yolk, then pour in Bourbon and vanilla extract.
- Pour the wet ingredients into the dry ones and mix together with a spatula. Fold in pecans and dark chocolate chunks.
- Roll the dough into balls so and place approximately 8 balls on each parchment paper, leaving enough space in between each of them.
- Bake each batch for about 11-12 minutes. Remove from the oven and let cook for about 5 minutes on the cookie sheet, then transfer to a cooling rack.

i reduced sugar a bit and used chocolate chips and dried cranberries. the cookies are too sweet for me – the cranberries likely contributed to it – but still tasty.

What about rum extract instead of the alcohol for the cookies? Does the milk change the consistency of the batter?

Hello! I haven’t tried with rum extract so I’m not 100% sure about the result but my bet is that it should work just fine and not change the final outcome of the cookies. I hope this helps! Del

Hello. What can you use instead of Bourbon, something non-alcoholic?

If you do not like the taste of alcohol in your cookies, I would simply replace with 2 Tablespoons of milk, no other flower water or juice that would compromise the vanilla in the cookies. I hope this helps! Del
