This vibrant roasted broccolini and white bean salad with feta is a simple healthy salad recipe filled with refreshing flavors. It comes with a maple mustard vinaigrette, and a subtle touch of tahini drizzled all over.

For the salad:

  • 3 small broccolini (or 1 large head broccoli, cut into florets)
  • 2 Tablespoons extra virgin olive oil
  • Sea salt
  • 5.3 ounces (150g) baby spinach
  • 5.3 ounces (150g) feta, diced
  • 1 13.5-ounces can (400g) white beans*, drained and rinsed
  • ½ red onion, sliced
  • 3 Tablespoons tahini
  • ½ lemon, freshly squeezed

For the vinaigrette:

  • 1 teaspoon Dijon mustard
  • 1 Tablespoon maple syrup
  • 1 Tablespoon balsamic vinegar
  • 3 Tablespoons olive oil
  • Sat and freshly ground pepper

Instructions

  1. Preheat the oven to 425°F (220°C) and line a large baking sheet with parchment paper. Set aside.
  2. Place cut broccolini in a large mixing bowl. Add olive oil, a sprinkle of sea salt, and combine until coated. Arrange broccoli in a single layer onto the prepared pan, and bake for 10-15 minutes. Remove from the oven, and let cool slightly.
  3. While broccolini is roasting, make the vinaigrette. In a bowl, whisk together mustard, maple syrup, vinegar, olive oil, salt and pepper.
  4. In a large mixing bowl (or serving bowl), add baby spinach, roasted broccoli or broccolini, feta, white beans and red onions. Pour half of the vinaigrette over and toss until combined. Add more vinaigrette if needed.
  5. Whisk tahini and lemon juice in a small bowl until smooth and creamy, adding a few spoonfuls of water to thinner the texture if needed. Drizzle over the salad, and enjoy!

Notes

* You can choose canneloni beans (white kidney beans), or any other white beans. Using them canned will spare you some precious time for the recipe. If you want to cook the white beans from scratch, keep in mind that this method will take longer as you will need to soak the beans overnight before cooking and using them in the recipe.
