Let’s have a fancy homemade brunch today! French toasts served on your brunch table is probably something you had before, right? But have you ever tried Savory French toasts instead?
I always run out of creative ideas when it comes to savory treats for brunch and I often end up with some classic egg recipes (scrambled eggs, egg muffins – this one is fantastic recipe though…), while I have plenty of sweet recipes in mind!
I discovered savory French toasts a couple of years ago at Eggs, a wonderful brunch place in Brooklyn. Then I stumbled upon a savory French toast recipe on the beautiful blog Lemony Thyme a while ago. I tried it with some friends, and they absolutely loved it, and so did I! Since then I can’t get them away from my mind and I had to create a new one for you. And I did!
The recipe came up easily: on a bed of balsamic onion jam I added some sun-dried tomatoes. Then I like to add some greens everywhere, and I guess it’s my healthy secret tips – don’t forget the greens in everything you cook!
Recently I became very addicted to kale, and I figured it would pair the recipe perfectly, so I simply sprinkled some slightly sauteed kale with garlic on top of these savory French toasts. Amazing!! If you never tried savory French toasts before, you’ve got to try this recipe, it’s a love story I promise.

Ingredients
For the balsamic onion jam:
- 1 Tablespoon butter
- 1 Tablespoon olive oil
- 1 small red onion, diced
- 1 Tablespoon brown sugar
- 3 Tablespoons sun-dried tomatoes, minced
- 1 Tablespoon balsamic vinegar
For the French toasts:
- 3 eggs
- 1/3 cup (80 ml) cream
- Salt & pepper
- 1 Tablespoon butter for frying pan
- 4 large slices bread
- 1/2 cup (50g) shredded parmesan cheese
For the sauteed kale:
- 2 cups (100g) kale, roughly chopped
- 1 Tablespoon olive oil
- 1 small garlic clove, crushed
- Salt & pepper
Instructions
- For the balsamic onion jam: heat butter and olive oil in a skillet over medium-high heat. Sauté onion until tender, about 5 minutes. Reduce heat to medium-low, add brown sugar and continue cooking for another 5 minutes, stirring occasionally. Add the sun-dried tomatoes, stir in balsamic, and cook for another 2 minutes.
- For the French toasts: whisk together eggs, cream, salt and pepper. Dredge bread slices in egg mixture, turning several times until each slice is soaked.
- Melt butter in a skillet under medium heat. Add soaked bread slices, sprinkle top of each slice with some parmesan cheese. Pan fry until golden brown.
- For the kale: sauté the kale with olive oil in a skillet on medium-high heat for a few minutes, stirring occasionally. Add in the crushed garlic and season with salt and pepper.
- Serve the French toasts topped with a spoonful of balsamic onion jam, sprinkle some parmesan and top with some sauteed kale.
