  • The brownie bottom. For years, I tried to make brownie bottom cheesecakes with so-so success, until I found this simple brownie recipe that works a wonder as a cheesecake base. The use of unsweetened cocoa powder is key to create a rich, chocolate-y center, that remains perfectly soft even after the cheesecake has cooled. Do not try to use a brownie recipe using baking chocolate or it will harden while the cheesecake is cooling and make a dense bite.
  • The white chocolate cheesecake. This cheesecake filling is baked and requires monitoring while baking (read below my tips for success). The result is super creamy and perfectly balanced in flavors, with just the right amount of sweetness.
  • The fresh strawberries on top. This last layer is optional, and the white chocolate cheesecake brownies could be enjoyed on its own or with a drizzle of caramel sauce. You could also top with other fruits. A few ideas that pair with chocolate include raspberries, pear slices or fresh mango.

Tips for success

Not to worry, this white chocolate cheesecake brownies may look a little bit fancy but is actually way easier to make than it seems. Just follow the instructions carefully, and don’t miss these easy tips for success:

  • Use room temperature cream cheese + eggs for the cheesecake filling. This is key to any cheesecake recipe.
  • Let cool the melted white chocolate slightly before using. I usually leave it for about 5 minutes on the countertop before using. The idea here is to prevent a high contrast in temperature when incorporating with the other ingredients and in particular the eggs.
  • Do not over-bake (or under-bake!) the cheesecake brownies. Over-baked cheesecake brownies can get rubbery and dry real fast. To ensure your cheesecake is evenly baked, it should be set on the outer surface and maybe just a little wobbly in the center (not too much!).
  • Do not skip the chilling time in the refrigerator before serving. Also, even if it’s really tempting (believe me, I’ve been there too!), do not try to speed up the chilling process by placing the cheesecake in the freezer to help the filling firm up. This will not help, unfortunately. Instead, your cheesecake will freeze on the sides and will remain runny in the center.
  • Use a warm knife to slice the cheesecake brownies to make clean cuts. Run a thin, sharp knife under hot water between each cut, wiping it clean to prevent any sticking. If any cheesecake or brownie does stick to the knife, wipe it clean between cuts!

Can I use a classic cheesecake crumb base?

Absolutely! You can make this white chocolate cheesecake with a brownie bottom, or you can swap the bottom and use a different one. Here are 3 possible options:

  • Use a crumb base, exactly like for a classic cheesecake.
  • For a chocolate crumb base, use the classic crumb base and add 1 or 2 Tablespoons of unsweetened cocoa powder to the biscuits.
  • Replace the brownie bottom with a blondie bottom!

For the brownie bottom:

  • 1 ¼ sticks (140g) unsalted butter, melted
  • 1 cup (200g) sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • ¾ cup (100g) all-purpose flour
  • ½ cup (50g) natural unsweetened cocoa
  • ¼ teaspoon baking powder
  • ¼ teaspoon salt

For the white chocolate cheesecake:

  • 2 cups (350g) white chocolate
  • 1/2 cup (120 ml) whipping cream
  • 8 ounces (230g) cream cheese, softened
  • ½ cup (100g) sugar
  • 1 Tablespoon flour
  • 3 large eggs, at room temperature
  • 1 teaspoon vanilla extract
  • 1 small lime, zest + juice*
  • 1 lb (450g) strawberries, sliced
  • Fresh mint leaves

Instructions

Preheat oven to 350°F (180°C). Line a 9-inch (23cm) springform with detachable sides with parchment paper in the bottom and grease the sides.

For the brownie bottom:

  1. In a medium sized bowl, combine butter, sugar and vanilla extract. Add the eggs and mix until well combined.
  2. In another bowl, combine flour, cocoa, baking powder and salt.
  3. Add the dry ingredients to the egg mixture and mix until well combined.
  4. Pour the batter into the prepared pan and spread evenly. Bake for 20-25 minutes, or until a toothpick comes out clean.

For the white chocolate cheesecake:

  1. Place a baking pan filled with hot water on the lower rack of the oven. Preheat oven to 325°F (160°C).
  2. In a metal bowl over a pan of simmering water, melt white chocolate chips with the whipping cream, stirring occasionally until smooth. Alternately, white chocolate can be melted in the microwave with the whipping cream in a glass bowl, at 50% power, stirring every 30-60 seconds until smooth.
  3. In a large bowl, beat softened cream cheese and sugar with an electric mixer until smooth. Blend in flour. With mixer on low speed, blend in eggs one at a time. Blend in vanilla and melted white chocolate.
  4. Pour the cheesecake batter over crust and bake for 55 to 60 minutes, or until filling is set. Cool, cover with plastic wrap, and refrigerate for 8 hours before removing from pan.
  5. Just before serving, mix sliced strawberries in a bowl with lime zest and juice. Drain the excess of juice, then display the strawberries on top of the cheesecake, decorating with fresh mint leaves.

* You could also use lemon zest and 1 Tablespoon lemon juice instead of lime.
