I can’t believe it myself: I’m back with another avocado toast recipe! Isn’t it the prettiest, though? I mean, have you ever seen hummus this bright pink? Beets are quite awesome when it comes to food coloring and they also add a big punch of nutrition. They are indeed a good source of fiber and they are also filled with folate, which support heart health. Also, note that chickpeas are a good source of protein, which insure that your toast is 100% vegan-friendly.
This homemade beet hummus is made only from 6 ingredients and takes just a couple of minutes to prepare. Place chickpeas, beets, tahini, lemon juice, olive oil and garlic in a food processor and mix until smooth. Taste, and adjust the seasoning with salt and pepper. You can then spread right away over your toasts, but if you have a little bit of time I recommend you let it chill in the refrigerator first. It will help the flavors to develop even more.
When ready to use, it’s time to assemble your avocado toast. With years of avocado toasts behind me, I have learned the tips and tricks to the perfect avocado toast along the way and I’m excited to share them with you. So here’s how to!
How to make a great avocado toast?
Choose great avocados. You want ripe but not over-ripe avocados. Look for avocados that yield a bit to a gentle squeeze.
Use good bread. Most of the time nowadays I prepare my own Easy No-Knead Bread Recipe. It’s a great option, especially when still fresh from the oven, and it comes in many variations. I also like dark, whole grain bread for my avocado toasts. Use thick slices and toast them a little.
Season your avocados. I recently shared my secrets to master the avocado toast. Whether you mash your avocado or use it sliced, the seasoning is everything. Season with flaky sea salt, freshly ground black pepper (my favorite is and remains the Timut Black Pepper) and add some chili flakes for a little extra kick.

Ingredients
For the beet hummus:
- 1/4 pound (115g) beets (about 2 medium sized beets), cooked, peeled, and diced*
- 1 15-ounces can (280g) chickpeas, rinsed and dried
- 1 Tablespoon tahini paste
- 3 Tablespoons lemon juice
- 1 Tablespoon olive oil
- 1 small clove garlic, minced
- 1/2 teaspoon ground cumin
- Sea salt
- Fresh ground pepper, to taste
Other ingredients:
- 2 slices seeded bread, toasted
- 1 avocado, halved and sliced
- Fresh cilantro, optional
Instructions
- For the beet hummus, place all ingredients in a food processor (or blender) and pulse until smooth. Taste and adjust seasonings and ingredients as desired.
- Use straight away or for best results, chill and store in the refrigerator for at least 30 minutes.
- Smear toasted bread slices with beet hummus and top with avocado slices, and cilantro, and other toppings of your choice. Season with flaked sea salt and freshly ground black pepper.

* Choose your favorite cooking method: roasted in the oven or cooked in boiling water.
