When in need for a healthy treat that is both super refreshing and extremely easy to make, these watermelon popsicles are the answer. They’re fruity, not too sweet, and made with natural ingredients only, which make them perfectly suitable for the entire family, toddlers included.

Ideally you will need a popsicle mold to make them (see my recommendations below), but do not worry if you don’t have one, you can still make these popsicles using a muffin mold! In short, these watermelon popsicles are beautiful, healthy, easy to make and extra delicious. What else could you possibly ask for on a hot summer day?

The ingredients you need:

  • Watermelon. You will need approximately 3 cups diced watermelon for this recipe. Ideally, choose a seedless watermelon, it will make your job easier.
  • Strawberries. They bring additional sweetness to the popsicles and make them extra delicious. Fresh strawberries work fine, but I like to use frozen strawberries to create this nice slushy texture.
  • Lime. You will need both lime juice and zest. It brings a subtle tangy flavor to the popsicles that also make them extra refreshing.
  • Honey or agave syrup. It’s the little sweetener in the recipe; just one Tablespoon is needed. If you use very ripe and juice strawberries, you can also skip the sweetener.

Which equipment do I need to make these popsicles?

These watermelon popsicles are really effortless and do not require any cooking skills whatsoever. All you need is a good blender and a popsicle mold. There are many types of popsicle molds available, the most common ones being the silicon and the metal ones. In the middle, the aluminium covering popsicle molds are a great alternative. They are the perfect reasonable size and hold the popsicle sticks up straight perfectly.

What if I don’t have a popsicle mold? Not to worries, you can still make these key lime popsicles using a classic muffin tin. Then poke your popsicle sticks upright in the center and freeze. Easy!

How to make watermelon popsicles?

  1. Add all the ingredients to a blender, and let the blender do the job for you!
  2. Once all ingredients are blended and smooth, strain them into a mesh strainer to discard the pulp and the extra seeds (use a spoon to help go faster through the mesh strainer).
  3. Transfer the mixture to the popsicle molds, add the sticks (or top of mold, depending on which popsicle mold you have).
  4. Freeze, and voilà!

How to store and unmold these watermelon popsicles?

Once the watermelon popsicles are ready, pop them in the freezer for 4 hours or ideally overnight. After this, you can either plan to eat them right away or to store them for later. For the last option, unmold the popsicles as explained below, then place them on a large baking sheet and freeze for about 20 minutes until completely frozen again. Then place them in freezer bag to prevent freezer burn. These watermelon popsicles will stay fresh in your freezer for about one month.

To unmold the popsicles, turn the popsicle molds sideways and run them under lukewarm water for 5 -15 seconds (sometimes a bit longer, but make sure you don’t melt the pops). Then, slowly and carefully wiggle sticks and remove each popsicle. It’s ready to eat.

  • 3 cups (750 ml) seedless watermelon, diced
  • 1 cup (250 ml) fresh or frozen strawberries, halved (I use frozen)
  • Zest of 1 lime*
  • 2 Tablespoons lime juice
  • 1 Tablespoon honey or agave syrup

Instructions

  1. Place watermelon and strawberries in a blender. Add lime zest, juice, honey (or agave), and blend on high until smooth.
  2. Using a mesh strainer, drain the watermelon mixture into a bowl to discard the remaining seeds (even the seedless watermelons have a few) and pulp.
  3. Carefully pour the watermelon mixture into popsicle molds, up to the top. If you are using a popsicle mold with a lid, place it and add the popsicle sticks. Otherwise, simply cover with the top of mold (that usually include the stick).
  4. Freeze on a level surface for at least 4 hours. To unmold, turn the popsicle molds sideways and run them under warm water for 5 -15 seconds. Enjoy!

Notes

* Quick tip: start with zesting the lime, and juice it after. Doing the opposite is very tricky and almost impossible.
